Ask how many calories are in a taco and the honest answer is a range. The tortilla is the small part; what sits on it, whether anything was fried, and how much cheese and crema went on top move the number by a factor of two or more. Below are twenty-four Mexican and Mexican-American items USDA has weighed, per 100 g and per piece.

USDA FoodData Central weighs a pork tamale at 174 kcal per 100 g and 247 kcal per 142 g piece (FDC 334628), a corn-tortilla beef taco at 261 kcal per 105 g (FDC 2708515), a cheese quesadilla at 379 kcal per 120 g (FDC 2708591), a medium bolillo at 372 kcal (FDC 2707664) and a churro at 189 kcal (FDC 2708070). Fried masa and cheese are the two things that double a dish per 100 g.

USDA has never weighed three things people ask about: the torta (so a torta starts at the 372 kcal of its bolillo, before the filling), tepache and most other aguas frescas, and street elote with mayonnaise, cheese and chile, for which the buttered ear above is a floor, not an answer.

Mostly tortilla and masa

All of these are corn or flour dough plus whatever is on it (the wrapper itself is weighed in how many calories are in a tortilla), and the per-100 g column sorts them cleanly. Steamed or sauced masa sits at the bottom: pork tamale 174, sauced enchilada 178, bean-and-beef burrito 191, chilaquiles 195. Tacos, where meat is a bigger share of the weight, run 243 to 249. Cheese-led dishes climb to 273 for a cheese enchilada and 316 to 368 for a quesadilla, and fried masa tops the list: nachos with cheese 343, a bare tostada shell 474. Per piece the spread is wider because pieces differ: a taco is about 100 g and a restaurant quesadilla 194 g, which is how the quesadilla reaches 714 kcal, nearly three tacos; a US hard-shell fast-food taco is only 69 g and 156 kcal (FDC 170689).

Mostly protein: hamburgers, hot dogs and pozole

The street hamburguesa and hot dog have no USDA record of their own; the American fast-food and survey entries tell one story: size decides, not recipe. A regular patty with condiments is 97 g and 255 kcal; a large one with condiments, vegetables and mayonnaise is 247 g and 558 kcal, even though per 100 g it is lighter (226 against 263) because lettuce and tomato dilute it. The survey database’s typical hamburger sits between at 145 g and 418 kcal (FDC 2706920). A hot dog on a white bun is 102 g and 302 kcal. Pozole is the outlier at 43 kcal per 100 g and 105 for a 245 g cup: most of the cup is broth.

Bakery: bolillo, pan dulce, churro, and the torta problem

A bolillo is 318 kcal per 100 g: 242 kcal for a small 76 g roll, 372 for a medium 117 g one, 515 for a large 162 g one. Pan dulce is 367 per 100 g in SR Legacy, whose 63 g piece is 231 kcal; the survey record, at 371 per 100 g, weighs a medium 93 g piece at 345 kcal (FDC 2707669). A 45 g churro is 189 kcal, and at 419 per 100 g it is the second-densest item on the page. The torta remains unweighed: log the bolillo, then the filling, with crema and beans as their own lines.

Drinks

USDA has measured horchata three times: as served in restaurants, 54 kcal per 100 g and 123 kcal for a 228 g cup; made at home with water, 88 kcal per 100 g and 218 kcal for a 248 g cup (FDC 2710602); and made with milk, 91 kcal per 100 g and 226 kcal for the same 248 g cup (FDC 2710603). Tepache has no USDA record, and neither does agua de jamaica as it is served, with sugar: USDA’s hibiscus entries are unsweetened brewed tea (FDC 171946). Of the other aguas frescas, USDA’s nearest record is a tamarind drink (FDC 2710568).
