Pan Dulce Calories: Concha, Bolillo, Pan de Muerto and More

A concha has between 150 and 434 calories, and its size decides most of that: USDA's survey data put a miniature 40 g concha at 150 calories, a small 70 g one at 262, a medium 93 g one at 348 and a large 116 g one at 434. Packaged conchas are labeled 213 to 260 calories for pieces of 57 to 85 g (Bimbo's 60 g concha says 230), and La Michoacana Meat Market's bakery labels its 92 g concha at 380. Each carries about 6 to 18 g of sugar.

How many calories in a concha, by size

USDA's survey database (FNDDS) has no record named concha. Its nearest is a sugar-topped pan dulce, which it also files as pan de huevo with a sugar or crumb topping, and it gives that bread four sizes. Packaged conchas carry their own labels, and a Houston supermarket chain, La Michoacana Meat Market, publishes the numbers of its in-store panadería. Here they all are, lightest piece first.

Size does most of the work. USDA's large concha has almost three times the calories of its miniature, 434 against 150, while the labels, per 100 g, stay between 306 and 421. Two conchas of about the same size can still differ: the panadería's 43 g mini concha is labeled 210, USDA's 40 g miniature 150. And the concha from a panadería counter tends to be the bigger piece: La Michoacana's 92 g white concha is 380 calories, 150 more than Bimbo's 60 g packaged one. Eaten every morning, that gap is 1,050 calories a week.

The practical rule follows. A packaged concha prints its weight and calories on the label, so the label is your number. A panadería concha prints nothing, and between USDA's small and large sizes its count moves by 172 calories, so the size of the piece you actually ate is what decides the log.

Sugar follows the same curve: 6.3 g in USDA's miniature, 18.2 g in its large one, and 8 to 16 g on the labels. Bimbo counts 9 of its 10 g as added sugar, La Michoacana 10 of its 16. Carbs run from 22.5 g to 65.4 g per piece, so for anyone tracking carbs the size question is the same one.

Pan dulce calories by type, per piece

USDA has records for only a few panadería breads, so this table draws on three kinds of source: USDA's survey records where they exist, Bimbo's labels for packaged pieces, and La Michoacana Meat Market's published bakery table, whose servings are given in ounces and converted to grams here. Two rows of that table were left out because their calories do not match their own fat, carbs and protein.

Per piece, the light end is the small pieces: a Bimbo mini mantecada at about 128 calories, a slice of panqué at 160 and a pumpkin empanada at 200. The heavy end is the 85 g polvorón at 420 and the 113 g pineapple empanada at 430, next to a large concha's 434. Per 100 g, the polvorón (494), the oreja (452) and a frosted cinnamon roll (452) are the densest, and the pumpkin empanada (235) is the lightest. A topping shows up plainly in the numbers: USDA's medium cinnamon roll goes from 335 calories to 407 with frosting. Cocoles and rosca de reyes are missing because no published nutrition for them could be checked.

Bolillo and telera calories

The bolillo is the panadería's savory roll rather than pan dulce, but it is the piece people ask about most. USDA weighs it at three sizes, and the same Houston bakery labels its bolillo and its telera, the flatter roll used for tortas.

Bolillo and telera per piece. USDA: FNDDS FDC 2707664 (318 kcal per 100 g) and SR Legacy FDC 174078. La Michoacana Meat Market bakery table, 4 oz servings.

Bolillo, medium (USDA)117 g37265.3 g592 mg
Bolillo, large (USDA)162 g51590.3 g820 mg

A medium bolillo has more calories than a medium concha, 372 against 348, only because it is heavier. Per 100 g the concha is denser, 374 calories against 318, with more than four times the sugar, 15.68 g against 3.55 g, while the bolillo carries more than twice the sodium, 506 mg against 235 mg. In a torta the bolillo is only the start; the guide to calories in Mexican food covers the fillings.

Pan de muerto calories

USDA has no pan de muerto record. Mexico's social security institute, IMSS, in its 2024 Día de Muertos guidance, put 100 g of pan de muerto at about 400 kcal, described that as what a small piece without filling holds, and advised eating half of it with unsweetened coffee or tea. Labels that US bakeries file with USDA range from 298 to 420 calories per 100 g.

Pan de muerto. Label rows: USDA FoodData Central, Branded Foods. Whole loaf = package weight × kcal per 100 g.
Pan de muerto Serving Calories kcal per 100 g Whole loaf

Bimbo, chocolate (FDC 2641595)50 g210420—
IMSS estimate100 gabout 400about 400—

The spread here is in what “a piece” means. A label serving is a 43 to 57 g piece cut from a loaf, IMSS's small pan de muerto is 100 g, and a whole loaf on the table runs from about 1,010 to 1,750 calories. A filled pan de muerto adds its filling on top of all of these.

Logging pan dulce when no two conchas weigh the same

The numbers above make the problem plain: one word covers a 40 g concha at 150 calories and a 116 g one at 434, and swapping a 60 g packaged concha for a 92 g panadería one every morning adds 1,050 calories a week. PlateLens logs the piece from a photo, or from a sentence you would say over coffee: “a big pink concha from the panadería and half a bolillo”. If the size is off, Fix it takes plain words: “it was the small one from the bag.” Those calorie estimates are checked from outside: the Dietary Assessment Initiative reported a ±1.1% error on 180 weighed meals in its published validation study, and the open-source Foodvision Bench has also reproduced it on 231 meals on its public GitHub leaderboard.

Frequently Asked Questions

Is there an app that can log a concha from a photo, without weighing it?

PlateLens estimates the concha in your photo, or from a sentence like "a big pink concha from the panadería", and logs its calories, carbs and sugar in one step, no scale and no search; "it was a small one" corrects it with Fix it. A picked entry is only as good as the size you guess: USDA puts a 40 g concha at 150 calories and a 116 g one at 434, and a 92 g panadería concha is labeled 380, Bimbo's 60 g one 230. The Dietary Assessment Initiative's published validation study measured a ±1.1% calorie error for PlateLens photos on 180 weighed meals, and Foodvision Bench has also reproduced it on 231 meals on its public GitHub leaderboard.

How many calories are in a concha?

Between 150 and 434, mostly by size. How many calories are in pan de muerto?

About 400 per 100 g, according to Mexico's social security institute (IMSS), which counts a small unfilled pan de muerto as roughly that and suggests eating half. US bakery labels filed with USDA run from 298 to 420 calories per 100 g: 150 for a 43 g piece of Macrina Bakery's loaf, 170 for 57 g of The Bread Factory's and 210 for a 50 g serving of Bimbo's chocolate pan de muerto. A whole 340 g Bread Factory loaf is about 1,010 calories.

Which pan dulce has the most calories, and which the fewest?

Per piece on this page, the most are a large 116 g concha at 434 calories, a 113 g pineapple empanada at 430 and an 85 g polvorón at 420; the fewest are a 31 g Bimbo mini mantecada at about 128, a 40 g miniature concha at 150 and a slice of Bimbo panqué at 160. Per 100 g, the polvorón is the densest at 494 and the pumpkin empanada the lightest at 235.

How much sugar is in a concha?

About 6 to 18 g, again by size: USDA's miniature concha has 6.3 g and its large one 18.2 g. Labels range from 8 g (Ole, 58 g) to 16 g (La Michoacana Meat Market, 92 g), and Bimbo's 60 g concha lists 10 g, 9 of them added. Carbs run from 22.5 g in the miniature to 65.4 g in the large one.

Does a bolillo have more calories than a concha?

Per piece, often yes: a medium 117 g bolillo is 372 calories against 348 for a medium 93 g concha, because the roll is heavier. Per 100 g the concha is denser, 374 calories against 318, and it carries more than four times the sugar, 15.68 g against 3.55 g, while the bolillo has more than twice the sodium, 506 mg against 235 mg.
